Elizabeth: Thomas Taylor in Doubting Thomas – Book 1 of my Bad Boys of Sweetwater: Tarnished Saints Series is a twice-widowed father of six boys but still makes time to cook. He made a special romantic dinner for Angel with asparagus. Thomas, can you give us your recipe for asparagus salad?

Thomas: Sure thing! It is a cold salad that’s fast and simple to make. Here’s the recipe:

Thomas’s Asparagus Salad:

1 bunch of asparagus, washed, trimmed and blanched (cool with cold water and chill in fridge)

Red onion – two slices (thin) and chopped

1 tomato (quartered)

2 yellow mini sweet peppers (sliced)

12 black olives – sliced

Put all in  a bowl and mix with the following dressing:

Dressing:

2 cloves garlic, minced

3 Tbsp olive oil

2 Tbsp apple cider vinegar

Salt and pepper to taste

Serve chilled
