In Judging Judas – Book 3 of my Bad Boys of Sweetwater: Tarnished Saints Series, my heroine, Laney McDermott tries to get her new husband, Judas Taylor and her pregnant teenaged daughter, J.D. to eat healthy foods. So she makes them steel cut oatmeal for breakfast. Of course, neither of them eat it, but Laney hasn’t given up hope yet. I’ll let her tell you about how she makes it. Laney?
Laney: Thanks, Elizabeth. Yes, Judas hasn’t been brave enough to try my steel cut oatmeal yet, but then again, what can you expect from a man who lives on junk food? But those bachelor ways will be changing now that we’re married.
So here’s the recipe the way I like it, with the oats a little firmer and more of a grain consistency. J.D. used to eat this when she was younger, so I’m hoping her new baby will at least eat it some day.
This recipe is enough for 2 small bowls.
Laney’s Steel Cut Oatmeal
1/2 cup oats – rinse first so it doesn’t get gummy
1 1/2 cups water (This is 1/2 cup water less than is called for, but this enables it to not be so mushy.)
A sprinkle of cinnamon
Slivered almonds
Raisins or dried Cranberries
Bring all this to a boil, stir, then bring down to a simmer and cover. It’ll take at least 20 -25 minutes, as this isn’t a fast meal. Near the end, remove lid to enable the rest of the water to escape and keep stirring so it doesn’t burn. Then serve topped off with fresh berries, more almonds and another sprinkle of cinnamon.
And for the record, Judas did make me a healthy breakfast – more or less. That is if you consider spicy chips healthy, sprinkled on top! At least he tried. – Laney ♥
