Judas’ Jazzy Breakfast Sandwich

Elizabeth: In Judging Judas, book 3 of my Bad Boys of Sweetwater: Tarnished Saints Series, sheriff Judas Taylor makes breakfast for his new wife, Laney in order to prove he can make a meal that is half-way healthy and not just junk food. I’ll let Judas tell you about it himself. Go ahead, Judas.

Judas: Thanks Elizabeth. I’ll tell you, Laney didn’t think I could do it, but I do know how to cook . . . somewhat. I was a bachelor so long that it was more of a burden to cook just for myself, and I’ll admit – I got lazy. Anyway, I made her my Judas Breakfast Sandwich and she really liked it. It’s easy, and here’s how it’s done. (Since I like meat and Laney doesn’t, you can make this either way. Just don’t forget the crushed chips on top!)

 Judas’s Jazzy Breakfast Sandwich:

(I don’t measure anything, I just guess. So, about a handful of each ingredient is good.)

Some leftover chopped up ham (unless you want a veggie sandwich)

Zucchini and Red Sweet Pepper – chopped or sliced

Put enough olive oil in a pan to cover the bottom and get the oil hot and drop it all in. While it’s cooking, whip up two eggs in a bowl and add a little black pepper.

Mince a large garlic clove and add to the cooking veggies.

Take a little spinach, or Laney likes kale, and chop it up and add it to the whole mixture. It doesn’t need to cook long. (If you don’t like spinach or kale, just use a bed of lettuce and sliced tomatoes to put it on.)

Then drop in your eggs and scramble it all up til it looks done and not runny. Turn off the heat and add some sliced pepperjack cheese atop it and cover the pan so the cheese melts.

In the meantime, toast up an English Muffin, Bagel, or Hamburger bun. Then place the egg mixture atop the muffin half and add my secret ingredient. Ground up spicy chips of any kind to the top of the eggs to give it that crunch factor. And there you have it. Even my snack foods can be incorporated into a healthy breakfast dish.
