Christina Goldstone has had her share of tough times. Being a single mother, widow, and business owner at the age of twenty isn’t easy. But finding Andrew – not to mention having him deliver her baby – was a stroke of luck. And now she’s got things handled, has time to work in her garden, and even has time to make Andrew his favorite cookies. I’ll let her tell you the recipe.
Christina: Elizabeth, baking cookies is a fun way to get creative and win a way to a man’s heart through his stomach. These are Andrew’s favorite cookies but my creative idea to add coconut to them.
Christina’s Oatmeal Raisin Cookies
Heat oven to 350 degrees F
With electric mixer, beat together ! cup (1 stick and 6 tbs) softened butter, ! c granulated sugar, 1 tsp coconut oil (optional) and ” cup packed brown sugar until creamy
Add 2 eggs and 1 tsp vanilla and beat wellYou
Add combined dry ingredients of 1 ! c flour, 1 tsp baking soda,1 tsp cinnamon and # tsp salt and mix well
Add 3 cups uncooked quick oats, 1 c raisins and 1 c shredded coconut, mix well
Drop spoonfuls of dough onto ungreased cookie sheets
Bake 10 – 12 minutes or until golden brown
Cool for a few minutes on cookie sheet before removing so they don’t fall apart
