Christina’s Oatmeal Raisin Cookies

Elizabeth: Christina Goldstone, in Igniting Andrew, Book 11 of my Bad Boys of Sweetwater: Tarnished Saints Series, has had her share of tough times. Being a single mother, widow, and business owner at the age of twenty isn’t easy. But finding Andrew – not to mention having him deliver her baby – was a stroke of luck. And now she’s got things handled, has time to work in her garden, and even has time to make Andrew his favorite cookies. I’ll let her tell you the recipe.

Christina: Elizabeth, baking cookies is a fun way to get creative and win a way to a man’s heart through his stomach. These are Andrew’s favorite cookies but my creative idea to add coconut to them.

Add combined dry ingredients of 1 1/2 c flour, 1 tsp baking soda,1 tsp cinnamon and 3/4 tsp salt and mix well

Add 3 cups uncooked quick oats, 1 c raisins and 1 c shredded coconut, mix well

Drop spoonfuls of dough onto un-greased cookie sheets
