Mindy’s Black-Lentil Soup

Mindy MacAllister comes to live at her grandfather’s farm, and cooks up a big batch of soup for James Taylor and his brothers in James – Book 6 of my Tarnished Saints Series. Mindy, tell us about it, please.

Mindy: This soup uses little black lentils instead of the normal ones, but either is fine. James and his brothers couldn’t get enough of it.

Mindy’s Black-Lentil Soup:

1 14.5 oz can Chicken broth

4 c.water

1/2 c black lentils

Heat this and add veggies as it is cooking.

1 purple onion, chopped

2 stalks celery, chopped

2 big carrots, chopped

1 small zucchini, chopped

2 small colored sweet peppers

1 tsp salt

1/2 tsp pepper

4 cloves minced garlic

Bring to a boil, then simmer on the stove until the lentils and veggies are soft. I’m going to say close to an hour. About halfway through, add in a handful of chopped parsley, 1 sprig of fresh rosemary, 1 sprig of fresh thyme. (Optional – but it gives it great flavor.)

Then just invite over a slew of hungry men, and they’ll love you!
